Easy Beef Stroganoff



This is one of my favorite recipes. Easy from start to finish. I even sneak veggies in there from time to 
time for the kiddos. :) Here's what you will need:


Ingredients:

1 lb ground beef 
half of an onion diced
6 or 7 mushrooms (or more or less if you like)
1 can of cream of mushroom soup (I pictured low fat and regular, your choice) 
2 tablespoons worchestire sauce
1/2 cup of water or beef broth 
1/2 of a 16 oz bag of egg noodles 
2 dollups of sour cream (not pictured)
salt and pepper to taste

Directions:


Brown the ground beef with the onions until cooked thoroughly and onions are translucent. In the 
meantime boil egg noodles as directed on package. 





Add the mushrooms. Continue to cook on low-medium heat for 10 min or until mushrooms are cooked.


Add can of cream of mushroom soup, water or beef stock and worchestire sauce. Continue to stir about 2 min until heated through. Remove from heat and add dollups of sour cream. 


Add salt and pepper to taste




Serve over noodles.

 OREO POKE CAKE

Oh my my my I love a good poke cake. After some trial and error I have found one to be tried and true to me and my family. This has to be one of my go to desserts. This cake is just as easy on your budget as it is to make! Everything in the cake itself I already had on hand in my pantry. Here's what you will need.



Chocolate cake

1 1/4 cup unsweetened cocoa powder
2 1/2 cups all purpose flour
2 1/2 cups sugar
2 1/2 teaspoons baking soda
1 1/4 teaspoons salt

2 large eggs and 1 large egg yolk
1 1/4 cups warm water
1 1/4 cups milk 
1/2 cup plus 2 tablespoons vegetable oil
1 1/2 teaspoons vanilla extract (I used imitation) 





Filling and topping
1 package white chocolate pudding 
2 cups of cold milk
10-12 Oreos 



Make the cake:

Preheat oven to 350 degrees. Liberally spray vegetable oil in 9 inch rectangular cake pan. Set the pan aside. 

Sift together the cocoa powder, all purpose flour, sugar, baking soda, and salt. Add to your mixer bowl. 

Add eggs, warm water, milk, vegetable oil, and vanilla extract. Mix on low speed until well blended and incorporated. Approximately 3 minutes. The batter will be a bit runny compared to box cake mix. 

Pour cake into oiled cake pan and bake in oven for approximately 35 to 40 minutes until fork comes out clean. Let cook completely! I actually put mine in the freezer until the cake is cool. 


Filling:

Add 1 package white chocolate pudding mix and cold milk to mixer. Mix on low speed for 2 min.  Take 5 Oreos and place them in a plastic bag to crush. 

Tip: make filling after the cake cools so it pours easily into the holes. 



Take the cake and poke holes all around it using the handle of the spoon.



Pour the pudding mixture into holes. There will be extra so just spread evenly on the cake. Crush the rest of the Oreo cookies in a bag and place half of that on top of the pudding and cake. Top with whipped cream and the remaining crushed Oreos.

Quick tip: You can substitute plain old chocolate cake mix for the cake for super simple and easy! :)
